Maple Waffle Egg and Cheese Sandwich

- 2 frozen or homemade waffles
- 1 large egg
- 1 slice sharp cheddar cheese
- 1 teaspoon butter or neutral cooking oil
- 1 to 2 teaspoons pure maple syrup
- Pinch of salt
- Black pepper, to taste
- Hot sauce, optional
Instructions
- Toast the waffles. Toast both waffles until golden and crisp. Give them another short toast if they still feel soft.
- Warm the pan. Heat a small skillet over medium heat and add the butter or oil.
- Cook the egg. Beat the egg with a pinch of salt and pepper. Pour it into the pan, let it set around the edges, then fold it into a shape that fits the waffle.
- Melt the cheese. Place the cheddar over the egg during the final minute. Cover the pan briefly so the cheese softens and melts.
- Build the sandwich. Put the egg and cheese between the two crisp waffles.
- Finish lightly. Drizzle 1 teaspoon of maple syrup over the top. Taste before adding more. Add hot sauce if you like sweet heat.

Easy variations from the same basic sandwich
Sweet heat
Use pepper jack and add a few drops of hot sauce after the maple.
Apple cheddar
Add two or three paper-thin apple slices for crunch and brightness.
Meatier
Add one cooked breakfast sausage patty or two strips of crisp bacon.
Vegetarian sausage
Add a cooked plant-based breakfast patty for a more filling version.

Use your favorite gluten-free toaster waffles and check every package label.
