Cheez-It Mini Pizzas

Crisp cheese crackers, a tiny spoonful of pizza sauce, melted mozzarella, and mini pepperoni. They are crunchy, salty, easy, and ready in about 10 minutes.

Why this works

Pizza flavor with maximum crispy edges

Every cracker becomes its own tiny crust, so each bite has a browned edge and a soft, cheesy center. The trick is using less sauce than you think. Too much sauce makes the cracker soggy before the cheese melts.

Best move: Use finely shredded low-moisture mozzarella. It melts quickly without adding much extra water.

The quick answer

Top large square cheese crackers with about 3/4 teaspoon pizza sauce, a modest pinch of mozzarella, and mini pepperoni. Bake at 375°F for 4 to 5 minutes, just until the cheese melts.

This is a normal, non-infused snack recipe. Cannabis is not an ingredient.

Ingredients

  • 12 large square cheese crackers
  • 3 tablespoons thick pizza sauce
  • 1/3 cup finely shredded low-moisture mozzarella
  • 12 mini pepperoni slices, optional
  • A pinch of dried oregano or Italian seasoning
  • Hot honey for finishing, optional

Have regular pepperoni? Cut each slice into four small pieces.

How to make them

  1. Heat a toaster oven or regular oven to 375°F. Line a small tray with foil or parchment.
  2. Arrange the crackers in one layer with a little room between them.
  3. Spoon about 3/4 teaspoon of pizza sauce onto each cracker. Keep the sauce away from the edges.
  4. Add a small pinch of mozzarella and one mini pepperoni slice to each cracker.
  5. Bake for 4 to 5 minutes, watching closely, until the cheese melts and the cracker edges deepen slightly in color.
  6. Cool for 1 minute. Finish with oregano, Italian seasoning, or a small drop of hot honey.

Plain cheese

Skip the pepperoni and use mozzarella plus a dusting of parmesan.

Hot honey

Add one tiny drizzle after baking for sweet heat.

Jalapeño

Add a very thin pickled jalapeño ring before baking.

Veggie

Use a few tiny pieces of bell pepper. Small pieces cook faster.

White pizza

Swap sauce for a small dab of ricotta, then add mozzarella and black pepper.

Ranch finish

Add a light ranch drizzle after the tray cools for a minute.

Keep the crunch

  • Use thick sauce and keep the layer thin.
  • Do not pile on wet toppings.
  • Serve soon after baking. They soften as they sit.
  • For a party tray, assemble everything first and bake right before serving.

Kitchen note

The tray and melted cheese will be hot. Let the pizzas cool for a minute before eating. If you are already impaired, avoid the hot oven. Use a sober helper or choose a no-cook snack instead.
