Flamin’ Hot Cheetos Grilled Cheese

Golden grilled cheese gets a loud, crunchy upgrade with a spicy red-orange crumb crust, gooey cheddar and pepper jack, and an optional touch of hot honey.

Why this works

Crunch outside, melt inside

Crushed spicy cheese snacks turn the outside of a familiar grilled cheese into a crisp, intensely seasoned crust. A thin layer of mayonnaise helps the crumbs stick and browns evenly, while a blend of cheddar and pepper jack delivers flavor without creating an oversized, greasy filling.

Best move: Crush the snacks into coarse crumbs, not powder. A mix of small and medium pieces makes a crunchier, more natural crust.

The quick answer

Spread mayonnaise on the outside of two bread slices, press them into crushed Flamin’ Hot Cheetos, fill with shredded cheddar and pepper jack, then cook slowly in a covered skillet until the crust is crisp and the cheese is melted.

Ingredients

  • 2 slices sourdough or sturdy white sandwich bread
  • 1 cup Flamin’ Hot Cheetos, about 1 1/2 ounces
  • 1 tablespoon mayonnaise, divided
  • 1/4 cup shredded sharp cheddar
  • 1/4 cup shredded pepper jack
  • 1 teaspoon hot honey, optional

Finely shredded cheese melts fastest. If using thick bread, lower the heat and allow extra time for the center to warm.

How to make it

  1. Place the Flamin’ Hot Cheetos in a zip-top bag. Press out the air, seal the bag, and crush them with a rolling pin or the bottom of a pan until you have coarse crumbs.
  2. Spread a thin layer of mayonnaise on one side of each bread slice. Press the mayonnaise-coated sides firmly into the crumbs, filling bare spots by hand.
  3. Set one slice crumb-side down. Add the cheddar and pepper jack in an even layer, keeping the cheese slightly away from the edges. Top with the second slice, crumb-side up.
  4. Warm a nonstick or well-seasoned skillet over medium-low heat. Add the sandwich and cook for 3 to 4 minutes, pressing gently once or twice with a spatula.
  5. Flip carefully. Cover the skillet and cook for another 3 to 4 minutes, until both sides are crisp and the cheese is fully melted.
  6. Move the sandwich to a cutting board and rest for 2 minutes. Slice diagonally and add a small drizzle of hot honey if you want sweet heat.

Extra cheesy

Add a slice of American cheese between the shredded cheeses for an especially smooth melt.

Cool ranch

Serve with a little ranch for dipping instead of putting a wet sauce inside the sandwich.

Pickle heat

Pat two dill pickle slices very dry and tuck them into the center before cooking.

Jalapeño popper

Add thin pickled jalapeño rings and a tablespoon of softened cream cheese.

Sweet heat

Finish the cut sandwich with a restrained drizzle of hot honey.

Milder crunch

Mix the spicy crumbs half-and-half with plain cheese-cracker crumbs.

Get a clean, even crust

  • Use medium-low heat so the crumbs do not scorch before the cheese melts.
  • Keep the mayonnaise layer thin; too much makes the coating heavy.
  • Cover the pan after flipping to trap enough heat to melt the center.
  • Let the sandwich rest before cutting so the cheese stays inside.

Kitchen note

The skillet, crumb coating, and melted cheese will be hot. Turn the heat down if the red crumbs darken quickly. If you are already impaired, avoid the stove and sharp knife. Ask a sober person to cook or choose a no-cook snack instead.
