Hot Honey Pepperoni Pizza Waffles
Flaky biscuit dough seals mozzarella and pepperoni inside crisp waffle pockets, finished with a light hot-honey drizzle and warm marinara for dipping.

The waffle iron makes every side crispy
Refrigerated biscuit dough gives you a sturdy, flaky shell without mixing or proofing. Crimping two thin rounds around a modest amount of low-moisture mozzarella and mini pepperoni keeps the filling tucked inside while the waffle iron browns both sides at once.
The quick answer
Flatten eight biscuits, sandwich cheese and pepperoni between them in four sealed pockets, then cook each pocket in a greased waffle iron until deep golden and cooked through.

Ingredients
- 1 can refrigerated biscuit dough, 8-count
- 1 cup shredded low-moisture mozzarella
- 1/2 cup mini pepperoni slices
- 1/2 teaspoon dried oregano or Italian seasoning, plus more to finish
- Nonstick oil spray
- 2 tablespoons hot honey
- 2 tablespoons finely grated parmesan
- 1 cup warm marinara, for dipping
Keep the marinara on the side. Sauce inside the pocket adds moisture and makes the seams more likely to leak.
How to make them
- Preheat a round or Belgian waffle iron to medium. Once hot, coat both plates lightly with nonstick spray.
- Separate the biscuit dough into eight pieces. On a lightly floured surface, flatten each biscuit into a round about 5 inches wide.
- Divide the mozzarella, pepperoni, and oregano among four rounds, keeping a 1/2-inch border completely clear.
- Top with the remaining rounds. Press out excess air, pinch the edges tightly, then crimp all the way around with a fork.
- Place one sealed pocket in the center of the waffle iron. Close gently without forcing the lid and cook for 3 to 4 minutes, until deep golden and the dough is cooked through. Repeat with the remaining pockets.
- Rest the waffles for 2 minutes. Drizzle lightly with hot honey, add parmesan and oregano, then serve with warm marinara.
Six easy variations
Jalapeño popper
Add a few pickled jalapeño slices and a teaspoon of cream cheese to each pocket.
Meat lovers
Use mini pepperoni plus small amounts of cooked sausage and bacon.
White pizza
Fill with mozzarella, a little ricotta, parmesan, garlic powder, and black pepper.
Veggie
Add finely diced bell pepper, olive, and pre-cooked mushroom without overfilling.
Buffalo chicken
Swap pepperoni for cooked shredded chicken tossed lightly in buffalo sauce.
Garlic parmesan
Brush the cooked waffles with garlic butter and finish with extra parmesan.
Keep the cheese inside
- Use low-moisture mozzarella and keep the marinara outside the waffle.
- Leave a clean border and crimp every part of the seam.
- Do not force the waffle-iron lid closed; gentle contact is enough.
- Rest each waffle for 2 minutes so the molten filling can settle.
Kitchen note
The waffle plates, dough, and melted cheese will be very hot. Use heat-safe utensils, never touch the iron plates, and test the center carefully before serving. Cook until no raw dough remains. If you are already impaired, avoid the hot appliance and ask a sober person to cook.
