Buffalo Chicken Waffle-Fry Nachos

Crispy waffle fries become the nacho base for spicy buffalo chicken, melted cheddar and Monterey Jack, cool ranch, celery, and scallions.

Why this works

The fries stay crisp under the toppings

Waffle fries have enough surface area to hold chicken and cheese, but they need a head start. Baking the fries in one layer until deeply crisp before adding anything wet protects the lattice edges, while coating only the chicken in buffalo sauce keeps the pan from turning soggy.

Best move: Use a large metal sheet pan and give the fries room. Crowded fries steam; a single layer browns.

The quick answer

Bake the waffle fries until crisp, toss cooked chicken with buttery buffalo sauce, layer it over the fries with cheese, then return the pan to the oven just long enough to melt.

Ingredients

  • 1 bag frozen waffle fries, 20 to 22 ounces
  • 3 cups chopped or shredded cooked chicken
  • 1/3 cup buffalo-style hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup shredded sharp cheddar
  • 1/2 cup shredded Monterey Jack
  • 1/2 cup thinly sliced celery
  • 1/4 cup ranch dressing
  • 1/4 cup blue-cheese crumbles, optional
  • 3 scallions, thinly sliced
  • Nonstick oil spray, as needed

Rotisserie chicken works well. Remove the skin and bones before chopping, and use chicken that is already fully cooked.

How to make them

  1. Heat the oven to 425°F. Lightly coat a large rimmed metal sheet pan with nonstick spray.
  2. Spread the frozen waffle fries in one layer. Bake according to the package directions, usually 20 to 22 minutes, flipping once, until deeply golden and crisp.
  3. While the fries bake, stir the hot sauce, melted butter, and garlic powder together. Toss with the cooked chicken until evenly coated.
  4. Pull the crisp fries toward the center of the pan. Distribute the buffalo chicken over them, then add the cheddar and Monterey Jack without completely burying the fries.
  5. Return the pan to the oven for 4 to 6 minutes, until the chicken is hot and the cheese has melted.
  6. Finish with celery, a thin ranch drizzle, blue-cheese crumbles, and scallions. Serve directly from the pan while the fries are crisp.

BBQ ranch

Swap buffalo sauce for barbecue sauce and add pickled red onion.

Jalapeño popper

Add sliced pickled jalapeños and small dots of cream cheese before melting.

Nashville hot

Use hot chicken seasoning, dill pickles, and a cool ranch finish.

Buffalo cauliflower

Replace the chicken with fully roasted buffalo cauliflower florets.

Blue-cheese lover

Use blue-cheese dressing and double the crumbles for extra tang.

Pickle ranch

Add chopped dill pickles after baking and stir a little pickle brine into the ranch.

Serve them at peak crunch

  • Do not thaw the fries before baking.
  • Keep the fries in one layer during their first bake.
  • Add ranch, celery, and scallions only after the pan leaves the oven.
  • Serve immediately; loaded fries soften as they sit.

Kitchen note

The sheet pan, fries, chicken, and melted cheese will be very hot. Use oven mitts and place the pan on a heat-safe surface. Use fully cooked chicken and reheat it until steaming hot; cooked poultry should reach 165°F. Refrigerate leftovers within 2 hours. If you are already impaired, avoid the hot oven and ask a sober person to cook.
